Black tea
Assam is famous for producing the black tea which is made from the leaves of the Camellia sinensis plant. It has caffeine as well as other stimulants and antioxidants. The black teas are oxidized, as compared to, other teas like green tea or white tea.
Tea was introduced to India by the British in the nineteenth century, to overcome the monopoly of Chinese production. The first area to be planted was the mountain region surrounding the city of Darjeeling, perched on the Himalayan foothills, in the 1850s.
Darjeeling, a northeastern city in India, is home to 85 tea plantations that generate 7 million kilos of tea per year.
Darjeeling blends are a little bit spicier than Assam brews. Darjeeling brew tastes best without milk and sugar. Delicate muscatel flavor of Darjeeling tea described as a "musky spiciness", "a unique muscat-like fruitiness in aroma and flavour", that develops in the second flush and is present to a lesser degree in the subsequent autumnal flush, makes it the “Champagne of Teas”. On the contrary, Assam blends taste best with milk and sugar because of their robust and full-bodied flavor.
Over 100 years old, Nilgiri Hills in Tamil Nadu are known for housing the best tea estates in India. The Nilgiri region of India is known for producing rich, well-rounded, and intensely aromatic teas, with environmental conditions that are perfect for growing high-quality black teas. Thus Nilgiri is a robust black tea from southwest India.
Flush refers to the plucking of a tea plant's harvest. First flush refers to the plucking of the first harvest in the springtime after the tea plants awaken from their winter dormancy. The second flush refers to the plucking of tea plants harvested after the first flush, typically in June.

Studies suggest that black tea (orange pekoe tea is a grade of black tea) is almost as effective with its antioxidant properties as green tea. Since the human body is always experiencing free radical damage, orange pekoe tea is beneficial if it’s incorporated into one’s diet.

- Assam CTC Tea - A common type of CTC tea is Assam tea, a well-known black tea. Assam tea usually steeps as a deep ruby red color with a rich, slightly bitter flavor.
- Assam Orthodox Tea - Orthodox teas are whole tea leaves produced using the traditional or the orthodox method, thus the name. The orthodox method is the rather old-fashioned way of processing tea – the leaves remain whole or slightly broken. They are plucked, withered, rolled, oxidized and dried. In Orthodox processing, while some tea leaves can look very small at the end, the leaves are never cut or torn apart. They are carefully rolled to produce a certain flavour. Assam Orthodox Teas are rolled with machinery in a manner that mimics hand-rolling. Most specialty teas are made with orthodox production methods.
- CTC vs Orthodox - Generally, CTC steeps stronger and has more of a tendency to be bitter, while Orthodox teas are higher quality, less likely to be bitter, and contain more subtle and multi-layered flavors than CTC teas.
- Assam Green Tea - Green tea is prepared by steaming and pan-frying the Camellia sinensis leaves and then drying them. Green tea is not fermented, so it's able to maintain important molecules called polyphenols, which seem to be responsible for many of its benefits, though it also contains caffeine. As a drink or supplement, green tea is sometimes used for high cholesterol, high blood pressure, to prevent heart disease, and to prevent ovarian cancer.
